Bake With Us: Lemon Crinkle Cookies

Hey everyone! Something you may not know about us is when we’re not consumed with fashion or beauty, another thing we love to do to pass the time is baking!! We decided to post something a little different today and if you guys also like these types of posts we’d love to do them more often! We have tons of recipes we love and especially love seasonal baking. During the summer months we LOVE light and fresh things… lemon is an all-time favourite flavor. We love the treats from Starbucks but also love our homemade. Plus, they’re healthier and less calories which a bonus is always!! Todays baking with the besties post are these incredible lemon cookies. They are super easy to make and SO delicious omg (you will not be disappointed if you try out this recipe). Cookies are one of our weaknesses so we can eat a lot of them lol. These lemon cookies are light and just melt in your mouth with their soft, chewy, and lemony goodness. This recipe is something a nieghbour passed on about 7 years ago and is still a favourite! Yields 2 – 3 dozen
Ingredients:
½ Cups softened butter
1 Cup granulated Sugar
½ Teaspoons vanilla extract
1 Whole egg
1 Teaspoon lemon zest
1 Tablespoon fresh lemon juice
¼ Teaspoons salt
¼ Teaspoon baking powder
1/8 Teaspoon baking soda
1 – ½ Cups all purpose flour
½ Cups Powdered Sugar

Directions:
1. Preheat oven to 350 degrees. Grease light coloured baking sheets with non-stick cooking spray and set aside.
2. In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest, and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining.
3. Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte (not melty or shiny). Remove from oven and cool cookies for about 3 minutes before transferring to cooling rack.
4. If using a non-stick darker baking tray, reduce baking time by about 2 minutes.
