Summer Snacking: Viral Boursin Dip

What’s better than summer snacking?!

We’re in our cooking era lately, but when we say cooking, we mean a 30-minute-and-under meal. We don’t want to spend tooo much time in the kitchen, especially when it’s nice out!

During the warmer months, we’re constantly getting together for patio hangouts and cocktails, which means we’re always looking for something light and fresh to snack on. There’s nothing worse than hot, heavy food on a warm summer day!

Enter: our take on the viral Boursin dip. This one needs to be added to your next summer menu! It takes almost no time to prep, can be made ahead of time, and is always a crowd-pleaser.

Ingredients

  • 2 packages of Boursin
  • 3 tomatoes
  • 2 cloves of garlic, minced
  • Garlic scapes
  • Red onion
  • Fresh basil
  • Olive oil
  • Salt + pepper
  • Balsamic glaze
  • Crackers – something sturdy for dipping!

Step One

  • Chop all of your produce into bite-sized pieces. De-seed your tomatoes to eliminate any excess liquid and keep the dip from getting watery.
  • While you’re chopping, let your Boursin sit out at room temperature so it has time to soften.

Step Two

  • Add all of your chopped produce to a bowl. Add salt, pepper, olive oil, and balsamic glaze to taste, then mix everything together.
  • On a shallow dish or serving platter, spread the softened Boursin into an even layer. Cover and keep it in the fridge until you’re ready to serve.

Step Three

  • Just before serving, spoon your tomato mixture over the Boursin. Add an extra drizzle of balsamic glaze if you’re feeling fancy, grab your crackers, and dig in!

Step Four

  • Enjoy!!!
